  • White Rum – Rum has a mildly sweet taste because it is made from agave. It is often found in tropical co*cktails. Clear rum is best for mojitos for its flavor and it won’t change the color of the co*cktail.
  • Frozen Dragon Fruit – Frozen dragon fruit is available at most grocery stores. It is a vivid pink and best for use in a mojito. If you have fresh dragon fruit, use it for a fun garnish.
  • Fresh Mint – You can’t have a mojito without fresh mint!
  • Lime Juice – Use fresh or bottled lime juice. Fresh lime juice is usually best in co*cktails.
  • Dragon Fruit Syrup – Use dragon fruit syrup for a touch of sweetness and additional dragon fruit flavor.
  • Lime Sparkling Water – Top the co*cktail with sparkling water. Lime-flavored water amplifies the flavor of the co*cktail without adding more sweetness. Sub for club soda if you want less lime flavor.

co*cktail Tools You’ll Need

  • Muddler – You need a muddler to smash the dragon fruit and mint leaves. It releases the flavors of the fruit and leaves into the co*cktail.
  • Mesh Strainer – Frozen dragon fruit leaves behind pulp and seeds, so use a mesh strainer to strain them out of the co*cktail. Personally, I like to use a straw with a mojito. So I also strain out the muddled mint leaves to avoid chunks in my straw.

Make Your Own Dragon Fruit Syrup

Flavored syrups add both sweetness and additional flavor to co*cktails. You can save money by making your own syrups at home. To make dragon fruit syrup all you need is frozen dragon fruit, water, and sugar.

First, combine 1 cup of water, 1 cup of sugar, and 1 cup of frozen dragon fruit in a small saucepan. Then, heat the saucepan on medium heat and bring to a simmer. Allow it to simmer for about 20 minutes. Be sure to stir it every few minutes.

The liquid should be bright pink. What is left of the fruit itself will be very squishy. Strain the syrup using a mesh strainer. You may need to strain it more than once to catch all of the seeds!

Allow the syrup to cool in the refrigerator. Then transfer to a bottle for easy pouring. Homemade fruit syrup lasts about 2 weeks in the refrigerator!

How to Make a Dragon Fruit Mojito

Mojitos are perfect for a hot summer day. They are simple co*cktails but look and taste impressive. These pitaya mojitos are even more impressive because they look so pretty.

Step 1 – Thaw a small handful of frozen dragon fruit. Either place the fruit in the fridge for a few hours or run it under cold water for a minute or so.

Step 2 – Add the thawed dragon fruit, 3-4 mint leaves, and dragon fruit syrup to the bottom of a co*cktail shaker. Use a muddler to smash (aka muddle) the fruit and leaves.

Step 3 – Add white rum, and lime juice to the smashed mixture.

Step 4 – Add a handful of ice cubes to the shaker. Then firmly place the lid on the co*cktail shaker. Shake for 30 seconds to combine the co*cktail ingredients and chill them.

Step 5 – Use a mesh strainer to strain the co*cktail into a glass over ice. Top with sparkling lime water.

Step 6 – Garnish the co*cktail with fresh mint leaves, lime wedges, or a slice of dragon fruit.

What Type of Glass Do I Use?

  • Collins Glass – A Collins glass is a tall narrow drinking glass. They are typically used for co*cktails that contain more than one mixer. The tall narrow shape of this glass helps carbonated drinks stay carbonated for longer. That’s perfect for this mojito since it contains soda or sparkling water.
  • Highball Glass – A highball (or hi-ball) glass is similar to a Collins glass. The only difference is that they are slightly less tall and wider. The glasses are often used interchangeably for serving co*cktails though. I used a lovely highball glass for serving these gorgeous dragon fruit co*cktails.

Can I Make This Mojito in Advance?

Yes! Mojitos are great for making ahead of time! Combine all of the ingredients except the soda, without ice. Store in an airtight jar or glass bottle until it is time to serve. Strain the co*cktail when serving. After straining the stored mojito over ice, top it with lime soda.

You may store this co*cktail in the refrigerator for up to a week. However, the flavor profile may change a bit the longer you store it!
