Beware.

Any self respecting nacho eater and assembler knows that cold toppings are added in a second layer after the cheese has melted, the chips have bronzed, and the meat, beans, etc. have warmed. Sifton seems to agree in part, but really who wants to eat wilted warm lettuce and avocados from a 400 degree oven?

Not ALL the lettuce and avocado. Just some of it, deep down in the middle of the nachos: sports-bar style. I like the melty-layering effect, but if you want to make nachos and pile a salad on top of it, go right ahead. That works, too!

For crispier nachos:After putting the tortilla chips on the pan, sprinkle with some Monterey Jack and Cheddar and place in the oven long enough for the cheeses to begin to melt. Remove the pan from the oven, add the additional toppings, and return the nachos to the oven to finish baking. The layer of cheese acts as a moisture barrier that helps the chips keep their crunch. The same technique also works on chalupas.

I do agree in part -- but as noted above, I also love that warm layer deep down in the heart of the 'chos, which remind me of grilled salad. Give it a try!

I made this yesterday and it was a YUGE hit! I did add the lettuce and avocado after the baking. I made 2 layers of chips topped with meat, cheese and refried beans. Then, when I removed it from the oven, I topped it with lettuce, chopped avocado.pico de gallo and sliced radishes. Plus several healthy dollops of sour cream. YUM! Quite tasty!

Here's how we do it at the bar....three pizza pans, each with a layer of meat, beans and cheese. Into th oven till the cheese melts, remove, add cold toppings and layer. That's how the pro's do it

Don't knock it before you try it! I just made it and it is delicious. Heating the layers of lettuce and avocado with the nachos makes for a wonderfully warm but still crisp dish, much like adding a warm bacon-based dressing to a salad.

I value this recipe for the seasoning of the meat. It's homemade taco seasoning, much better, and less expensive than those foil spice packets. I offered the veggies as topping. My best nacho effort thus far.

Apologies for that omission. The bacon should be added in step 3, with the final layer of meat and jalapeños. We've corrected the recipe.

i gotta get in the habit of reading the responses BEFORE i make a nyt recipe. you new yorkers are the only ones to give feedback to the food section. this was tasty but REALLY greasy. agree that the bacon and bacon fat don't really add anything. i'd also drain the beef. all that cheese on top make this a dangerously high fat recipe, s a whopping 89 grams of fat per serving (and over 1251 calories!). i agree the meat is really good and radishes at the end add a nice crunch.

Used left over beef filling from the loaded nacho recipe to make chili for lunch. Added about 2 cups beef broth and a 15 oz can of pinto beans. Best chili recipe I've encountered in a long time. Meat was left over because just two of us were eating the nachos!

Radishes are a very traditional additions in Mexican cooking, to add color, texture, and taste.

Didn't add cornstarch or the liquid to the meat. Seems you don't need cornstarch to thicken if you don't add liquid to thin it!

Great! As Chris suggested in the comments, I first baked the chips topped only with cheese for a few minutes until melted, before adding any other toppings. The chips stayed wonderfully crunchy! Also, as others have suggested, I only added the avocados, cilantro and lettuce after removing the nachos from the oven.

Very yummy! Added a can of beans, which was a nice touch. I did 2 pounds of meat, which was probably more than needed. Maybe one pound next time, and then add some corn too. Made at least 3x what my family of three could eat though!

Great recipe!I used ground turkey and no salt because the tortilla chips were salted. I followed other’s recommendations to not put lettuce on before going in the oven.And we loved it! I had never made loaded nachos before. This will go in my recipe “file” for sure.

Heat nachos with cheese, and lots of it. Serve meat, beans, and rest of toppings in bowls to do it yourself. No soggy chips or hot salad and you've saved the leftovers.

I really liked this, with my slightly healthier variations. No bacon; cooked onion in olive oil and added ground turkey instead of beef. I did enjoy adding lettuce to the layers—stiffened it up a bit with a coleslaw mix. Really tasty and flexible.

I like the cold ingredients in the middle, most of my test eaters didn't. I add those at the end on top.Other changes (have a vegetarian):no bacon; use olive oil to sautee onions / garlic1 pound of impossible ground beef instead of beef (it works GREAT)add one drained 16oz can black beans once 'beef' brownedless chili and cumin spices. substitute 1 teaspoon for 1 Tablespoonwater is finesmall can of sliced black olives, drained, added wherever 'beef' isone avocado is enough
